Vacationing with Kids

It's interesting how young children's idea of a vacation is so different from DH's and mine. We adults like to picture relaxing, resting, sleeping in, walking on the beach, that sort of thing--with some activities and exploring mixed in too, of course.

The kids, however, think that relaxing and resting are complete wastes of perfectly good time at the beach--not to mention sleeping!

They wake up early and are ready to go long before DH and I want to pry our eyes open. They'd be in the pool or surf most of the day every day if it was up to them. Of course, at ages 6, almost 5 and nearly 2, such activities require much intense supervision and interaction from Mommy and Daddy.

We're having a wonderful time, staying busy and taking lots of pictures. I think we'll come home rested in some ways and tired in others.

The beach sounds like a ton of fun and I'm sincerely sorry the yogurt curbed that for you!

I liked your cauliflower soup recipe and happen to be working on my soup-making skills, so I have a question: why do you saute the cauliflower in oil first instead of just boiling it all together with the potatoes? Creating the "cream" with the blender sounds like a fantastic idea!

Also, out of curiosity, I was wondering what portion of your diet is red meat? I recall your mother being a pro at deserts and you seem to be following in her footsteps...

Colleen, cauliflower takes longer to cook than potatoes do, and the auteing gives it a wonderful flavor. If you wanted to cut down on fat content, you could just boil the cauliflower until it was tender before adding the potatoes.

We eat mostly chicken, beef and lamb, with occasional pork thrown in. Once Baby E is cleared to eat fish we'll be eating more of that, also, and we're gradually adding more legumes which opens up some vegetarian possibilities. I probably cook a dessert once every week or two, on average. We often eat fruit, though.

Thanks (I was wondering if cauliflower takes longer to cook than taters - very surprising!) - FYI, I tried to email you and it came back... ?

Roo will be weaned today - YAY! He's currently nursing on the boppy here. LOL!! It's a tough decision but he thought it would be appropriate when he signs up for soccer (LOL!)... definitely a big boy now and we just gave him his own room, too. He appreciates having his own space and his stuff organized together - he actually chose to sleep there last night (probably, b/c we let him sleep with Bubbles & a wind-up flashlight) instead of his toddler bed when we offered! That was a tough decision, too, b/c we enjoyed his deep questions that would come up before he fell asleep, as well, as the convenience of doing night prayer together.

We're off to bum around Santa Fe today & go to Mass at the Cathedral - I figure we should get to know the place now that we're 30 minutes away! And, I can't wait to use the red, like new Maclaren Triumph stroller I picked up at the thrift store yesterday!!

You'll have to let me know how the weaning goes. Baby E is still going strong, although she's becoming more flexible about skipping or delaying nursing sessions if needed.

She seems to have transitioned back into sleeping in her own room very easily after our trip. I wasn't sure how that would go.

Isn't St. Anothny the patron saint of lost objects?
